My ambition is to produce natural wines with a strong typicity.

The secret of a typical grape and consequently a typical wine lies mainly in the way the vine is cultivated: with the intention of producing a grape on its soil and not by means of chemical fertilisers in "intravenous". To do this, the soil must be maintained with composts to avoid any imbalance. Minerality and a strong freshness generally reflect the typicality of a terroir.

It is created in the vineyard by precise pruning, without the objective of quantitative production. The vine must give what it can bring to the desired maturity. The final touch? The choice of the harvest date. Choosing the right ripeness allows us to approach this natural balance.

There is always a part of mystery in the making of great wines. For me, no winemaking (no matter how perfect!) can create what you get naturally. The grape contains this "magic". It is up to us not to destroy it.
